Mom's Pecan Pie


This classic dessert recipe comes from the Physicians Mutual “Caring and Sharing” cookbook, a collection of favorite recipes from our customers, friends and employees. This recipe is from Diana, one of our customers. Thank you, Diana!

“This recipe is from my mother-in-law, who was a wonderful baker. I make this pie at Christmas and other special occasions. The family loves it, even though it’s very rich. We always serve this topped with whipped cream.”

Ingredients

3/4 cup sugar
2 tablespoons flour 1 teaspoon salt
1 cup dark corn syrup
2 eggs, beaten
1/2 cup PET® evaporated milk
1 teaspoon vanilla
9-inch unbaked pie crust
1 cup pecans, halved

Directions

  1. Preheat the oven to 350 degrees. In a large bowl, mix the sugar, flour and salt. Add eggs, milk, vanilla and corn syrup to the bowl, then whisk well. Fold in pecans and pour into pie crust. Bake for 50 minutes and serve warm.
